The population of Giddings City, Texas, is 5,178 people. As of 2010, there were thirty-one percent of people under the age of eighteen, forty-five percent of those between twenty-five and forty-four, and fifteen percent of those between sixty-four and seventy-five years old. As of the 2000 Census, the city was home to over three hundred oil-related businesses. While oil-related activities decreased in the late 1980s, Giddings still maintained a population of 5,178 people. In 1988, local businesses included a hospital, dialysis clinic, chiropractic clinic, two nursing homes, two motels, a restaurant, a peanut mill, and a newspaper.

The population of Giddings is estimated to be around 4,969 as of the 2020 Census. The city was founded in 1871 when the Houston and Texas Central Railway first started running through the area. The name, "Giddings," probably comes from local magnate Jabez Deming Giddings, who came to the area in 1838 to claim a bounty on the death of his brother at the Battle of San Jacinto. A second possibility is that the city was named after his brother, Dewitt Clinton Giddings.
