When Captain Edward Smith settled in Elysian Fields, there was a Cherokee Indian village here called Biff Spring. The land was part of a Spanish grant, covering 4,448 acres. Smith purchased 121 acres in 1835. This was the first recorded settlement in Elysian Fields. The population was around 150 in 1884. By 1900, the population had doubled to about 200, and in 1910, the town was moved about a mile west. By 1929, the population was over 500, and there were fifteen businesses. Cattle-raising and farming remained the main sources of income for the population.
